Simple dish, of course, but by no means to be underestimated: artichokes and baked potatoes as a tasty side dish or, why not, a single dish for a light but complete meal. The recipe is easy, even more so if you choose frozen artichokes as a base. Here we offer it with our Artichoke Hearts in wedges, in packs of 600 gr.

Ingredients – for four people:

– a pack of Artichoke Hearts in wedges – 600gr
– 6-7 medium sized potatoes
– Oil
– salt and pepper
– parsley and chives


Peel the potatoes and rinse them in fresh water; cut them into chunks and blanch them for five to six minutes in plenty of water. drain the potatoes and place them in a previously oiled ceramic or metal pan.

Finely chop the parsley and chives.

Brown the still frozen artichokes in a pan with a drizzle of oil for a couple of minutes to soften them slightly. Then add the artichokes to the potatoes, add salt, pepper and the mixed chopped parsley and chives.

Finish cooking in the oven, already preheated, at 180 degrees for at least half an hour, taking care to stir it after a quarter of an hour to ensure even cooking.
